Our Story
The very beginnings of this were for only one reason.
I wanted to make a chocolate bar that was sugar-free, smooth, organic, that my husband would love and I could lose weight, while enjoying our favorite treat. It took trying many other sugar-free chocolate bars to realize that I wanted to make a better chocolate bar. Surely you can make a better tasing chocolate that actually dissolves nicely, has a great texture and flavor notes worth savoring. So I went to figure out how to make a delicious, sugar-free, healthier alternative to the typical chocolate bars that were being consumed in our household.
While living in Costa Rica, I saw a local tour available with a chocolate lady that would teach you how to make ganache and truffles with real cacao. Where do I sign up? I was so excited and couldn’t wait for the time to come to meet Mama Cacao. I learned incredible things about chocolate. Tasting REAL chocolate was more than I had imagined. It was like I finally found the holy grail I had been searching for. Tasting that chocolate and imagining the alternative, natural sweetener substitute I was looking to use I felt like I found a perfect match. After learning what I could, I bought everything needed to make a “bean to bar“ chocolate treat and I thought about finding a way that everyone can enjoy the benefits of pure cacao. I was in awe of the complexities in chocolate making. This would be a lifetime of learning ability. After doing endless recipes, experiments, some of them being a failure, I figured out the best way to share my love of this amazing, pure, good for you “food of the gods” as its called.
Fast forward to today and how we decided to work with nibs. I wanted to get a versatile product that had many uses. I found in purchasing other bean to bar treats online and having it delivered just isn’t realistic. Every order I bought with the exception of one company, arrived damaged due to heat. I live in Florida and Costa Rica so that is a major issue. I decided that making chocolate bars for me was only going to work with custom orders, local delivery and sending to friends and family only because they don’t care how it looks when it arrives. But the nibs??? They do not melt, they are shelf stable, and they do not break in shipping and to top it all off it is the healthiest form of cacao, %100. So our journey begins.
We have a farmer in Costa Rica that has been growing cacao in his family for many generations. No pesticides, organic, fermenting proper amount of time, not rushing any of the process. His farm is very healthy, beans are nice and plump with a good cacao butter ratio in them. The chocolate and nutty flavor notes are very rich and inviting and have a robust punch when first tasting and ends with a nice smooth finish. Tasting his cacao beans was the deciding factor to sell them to everyone else in its pure naked form.
We start by roasting a small batch of 5 lbs at a time. When the beans are lightly roasted and the flavor notes are the most prevalent, we put them into the cooling tray. Once they are just about cool but still a little warm they go through a cracker that was purchased and placed into our custom winnower to remove the husk fast and efficiently.
Our nibs are a world above others out there. I compared my product to many others and found that mine were not full of shells and dust. Ours have a deep, rich color to them that others just didn’t. Ours had an amazing flavor where everyone else’s tasted the same. We take pride in making sure that our product is the best quality from start to finish. We will be offering custom chocolate orders, Cacao covered candied organic nuts and other treats and limited edition goodies throughout the year including holiday specials.
